Market bouquets and arranged pieces built from whatever the field is best at that week. In June that means peonies and in September it means dahlias, and neither of those is up for negotiation.
Growing our own is what makes this worth doing at all. A bouquet cut two days ago in another state and a bouquet cut this morning are not the same object, and anybody who has had both knows it.
