Salad greens, roots, brassicas, tomatoes, the things a market garden actually lives on. Grown in beds close enough to the house that somebody looks at them every single day.

Vegetables are labor long before they are revenue, so this grows with the markets and the shares rather than ahead of them. What ends up in the ground will follow what people around here keep asking us for.
